Roast Herbed Chicken
MAKES 4 SERVINGS
Preparation time: 15 minutes, plus overnight refrigeration
Cooking time: 1 hour
1 bunch of fresh basil
3 garlic cloves, chopped
1 lemon, cut into quarters
3 sprigs of fresh thyme
3 sprigs of fresh rosemary
1 whole chicken, about 3 pounds
1 cup leeks, white parts only, finely chopped
4 carrots, finely chopped
Salt and freshly ground black pepper
1. In a small mixing bowl, combine the basil, garlic, lemon, thyme, and rosemary and stuff the mixture inside the chicken.
2. Wrap the chicken and refrigerate overnight.
3. The following day, preheat oven to 425°F.
4. Place the leeks and carrots in a deep roasting pan, season with salt and pepper to taste, and add ½ cup of water.
5. Place the chicken atop the vegetables and roast until a thermometer inserted into the middle of the chicken registers 170°F, or until the juices run clear when a knife is pierced into the thickest part of the thigh, about 1 hour.
6. Remove the skin from the chicken before serving.
7. Serve hot, garnished with the leeks and carrots.
